Miso Soup
by jamesisafoodie Miso Soup is a traditional Japanese soup made from miso paste and dashi stock (which I have outlined how to make in a previous recipe). There are many different varieties of Miso Soup, with ingredients based on seasonal and regional differences as well as personal preference. I have chosen a "basic" and traditional recipe that is found in most Japanese restaurants.

Dashi Stock
by jamesisafoodie Dashi is the most basic of Japanese stocks, and is used in many traditional recipes. It is also the base for miso soup. The following recipe is for "Konbudashi." Konbudashi is made from a dried, edible kelp called kombu and bonito flakes, which are dried fish flakes.
